Never miss the taste of fried chicken patties again! Made with Indian lentils Urad Gota and riced cauliflower for chicken-like texture and protein, this recipe gets most of its flavor from spices, so you can make it taste exactly the way you want by using your favorite seasoning. It also comes with lots of iron, calcium, and other essential micronutrients
Ingredients:
Riced cauliflower, frozen - 2 cups
Urad Gota lentils, dry - 14oz (or 400g)
Toasted wheat germ - 6tbsp (or 90g)
Whole organic breadcrumbs, lightly salted - 1 cup
Salt - 1.5tsp
No salt seasoning - 2tbsp
Garlic seasoning - 2tbsp
Dried dill - to taste
Black pepper (ground) - to taste
Avocado oil spray
Directions:
Soak dry Urad Gota overnight to make it softer and reduce the antinutrient content. Make sure that water covers the chickpeas by at least 3 inches, as it triples in size
Defrost cauliflower in the fridge overnight
Cook Urad Gota for about 40 minutes or until soft
Drain and thoroughly rinse the Urad Gota, add to a food processor and blend until the texture is relatively smooth and paste-like
Transfer the lentil paste to a large mixing bowl, add cauliflower, and the rest of the dry ingredients. Make into a dough
Preheat a large skillet, spray with avocado oil spray to prevent sticking
Form the dough into medium-sized patties using your hands
Fry on each side for a couple of minutes and serve
